Hunterstyle Ragout

  • 100 ml meat stock
  • 600 gr game meat (or beef; e.g. scallops, hip)
  • 10 ml Crescendo chili oil
  • 1 tbsp butter
  • 1 ea yellow pepper sliced
  • 1 ea onion, sliced
  • 2 ea garlic cloves, sliced
  • 1 ea pickled cucumber, sliced
  • 100 ml red wine
  • 200 ml double cream

Directions:

  1. Cut game meat into thin strips. Heat chili oil in a frying pan and fry meat for approx. 30 sec. and set it aside in the preheated oven (80° C/176° F).
  2. Add other ingredients for sauce into pan, bring to boil, stirring, cook for approx. 3 minutes. Return meat to pan, warm through. Taste with Inca salt, green pepper season.
  3. Side dishes: risotto rice, red cabbage

Preparation time: approx. 30 Minutes
